Got a crazy good deal on a set of vfs-1's. 20x9.5/10.5 +25 all around, 2012 XS coupe on eibachs, would 245/35, 275/30 work or should I go 255 up front? Pretty sure I'm gonna need to trim my bumper bracket huh?

The best AWD tire combos are~
235/35 & 275/30 0.07%
245/35 & 285/30 -0.07%
Virtually no difference in diameter front to back.
A 245/35 & 275/30 is -.97% which may cause issues since the rears wear faster, this would put the variance over 1% over time, this is the value that you should be under so no issues w/ your AWD system will result.
A 245/275 set IS much better than a 255/275 set, this is over 2% difference.
If you don't mind the slight stretch of the 235 on a 9.5 that would be the best bet, and the 275 in back should tuck ok without a trim.

Thanks a bunch, think I may stick with the 245/275 and just keep an eye on the wear as I definitely don't want to stretch. Going more for the look of Simpson's or Chrispyy's G unless the 285 out back would fit with the trim, I don't mind doing it, just don't want to be running to much neg camber just to make it fit.
I'd run the 245/45, the wheel edge will be about 5mm outside the fenders so 245s would tuck without problems, the 255s might rub the inside of the front fender under heavy compression since the fender isn't rolled like the rear fender.

Here's a 10.5 +25 running 275s so running the same 275 width you'd be 3mm further out than this~

With those offsets wheels will be poking outside the fenders but tires will tuck, may have to trim rear fender bracket and run a bit more camber depending on how wide the tires run (different tire brands run wider/narrower even w/ same tire sizes), if you want wheel edge flush to the fender you'd have to select offsets 10mm more positive all around.
I came across a decent craigslist deal on Vossen VSF1's that I'm considering making an offer on. Wheels are 20 x 9.5 and +25mm all around. Car is a 2012 G37xS on the stock suspension. What would the fitment be like on these? I'm also planning on getting springs in the near future, would this setup still work lowered?

A 255/35/20 would be a good tire size to run w/ those.
An XS coupe will fit well, an XS sedan will be poking about 15mm outside the fender well. Lowering will be a good plan , so in short, if you have a coupe go ahead and make that offer, if you have a sedan keep looking (an offset of +35 to +40 would be good for a sedan w/ that wheel width).
