The manual says 3 things:
1. You can change the oil at either 3750/3-months or 7500/6-months depending on your driving habits.

2. The engine requires any brand of regular or synthetic API certified 5W-30 oil.

3. Also in a footnote they "recommend" using their own branded "Nissan Ester Oil."

That's it. You cannot go wrong by following the manual. A lot of research, thought, engineer input and signoff went into writing the manual and exact service recommendations. Whatever your service man (or anyone on the web obviously -- including me ) tells you should not be considered as authoritative as what is written in the manual.

Following the manual, whether you go by 3 or 6 months or 3750 (not 3K btw) or 7500 depends entirely on your driving habits and not on what kind of oil you use.
Yes, the manual gives you choices.
Even though I like to drive aggressively once in a while, I drive only 1,500 miles every 3 months, kinda seems like a waste to dump it so soon(especially if using synthetic)
If I were to change the oil every 2-3K miles/ 5 months, would that void the warranty?

I would think not because in that case you are still adhering to the Schedule B "normal driving" maintenance schedule.

I've heard that using a full synthetic on our G's is actually BAD in terms of wear and tear...something about how its promotes more leaks or something because the car was built for semi-synthetic blends? Dealership also said that many people do it, and have had no problems. By the way, RP gives no more protection than Mobil 1. If you're sticking in that price range, go with Pennzoil Ultra/Plat. Good reviews. If you wanna spend a little more, you can never go wrong with Redline.

I'm using redline 5w-30 w/ pure one filter on 10K KM OCI (6250 MILES)

the 3.7 engine runs extremely hot, one of the reasons i went with redline is because it's ester based. it doesn't break down as easily as other oils.

nissan ester is not even a synthetic.. it's insane the price they sell it for!

Are there any reasons to go in for an oil change with my own oil filter over using whatever they use?

I am also going to use Redline 5w30 cause it is a great oil than can be purchased locally (kind of expensive). I will us a Purolator oil filter and change oil and filter at 5000 miles. I would NOT use Pennzoil if it were free as I had witnessed some very bad things regarding Pennzoil many years ago. Probably not the same oil today, but I still won't use it. I also considered Motul 8100 5w30 (but it is not available locally).

My wife drives our G37x to and from work which is a 14 mile one way trip that is 85% highway and 15% city with maybe 4 stops. A 5000 mile change interval will work just fine for us. Remember just my opinion and your milege may vary.
