Installed Android Auto
gotcha. The main reason why I asked about CarPlay is because I use an iPhone, and don’t know a whole lot about these types of systems. I guess what I could do is load just standard android on it, and connect it to my wifi somehow in my house and load music on it. The main challenge would be the touch screen at this point.
Edit: just learned about CarPlay dongles... Just pop one of those onto the RP3 running android, and it does exactly what I described above.

Totally missed this earlier - I've spent probably about 200 on this project, but I also killed a pi and eliminated half the converters I needed.. So this could probably be brought down to around 150? 125? - Once I actually have time / motivation to make a serious write up I'll have a better idea.

A while back my parents bought a little android box, but stopped using it because it was unstable. I'm currently trying to make the machine stable, and load vanilla android onto it. No, this doesn't fix my carplay issue yet, however that should be a breeze. My focus switched as I got an OBD2 reader, and would rather have the info displayed on the dash rather than on my phone. Reason being is my phone is heavy and it's big and blocks the buttons, and it'll kill my battery if I forget to plug it in, and when I get in I want it to just work!
If/when i can get this installed and tested, I'll write something up!

Was actually looking at this thread yesterday, how hard was it to do all this? Do you run the Pi in the glove box?

It was hard to develop, but I'm not sure how hard it would be to implement. It boils down to cutting some wires and running some new wires. Depends on your level of comfort with car electronics I suppose.
I've detailed a decent amount of what needs to happen to make this work, but I'd be happy to answer questions/share my schematic
I found an article from 95, a VGA to RGB Sync diagram. I’ll be heading to my electronics store tonight to see if I can pick up some gates, a clean piece of PCB and a couple other odds and ends to try and get the ball rolling... FINALLY!!
