I have 19x11" wheels front and back on my xS coupe. They're et25. They poke a bit in the front because I needed 5mm spacers to clear the calipers. They are sucked in in the rear at the moment, but I also have GKTech rear drop knuckles which pull wheels in more than stock.
I removed all my fender liners, and trimmed the rear bumper tabs, but didn't have to roll, or otherwise modify my fenders. Without the drop knuckles, the rears at et25 will poke slightly less than the fronts. If I were buying custom wheels, I'd go with et27 up front, assuming the wheel would clear the caliper, and et15 for the rear with drop knuckles.
11" for the most part is pretty wide for offsets lower than +30. Aodhan and Varrstoen are pretty popular brands that make wheels in a 19x11 +22 so you will find more references for these wheels than others.
I plan on racing autocross, a few events i have lined up are pretty much run what ya brung, so I'll have adjustable suspension and am trying to get a 305 front and rear with a 200 treadwear. That's pretty much necessary for me to be competitive.
Here's a quick and (very) dirty pic of my coupe as she sits. I still need to add the rear extended lugs and 10mm spacers, and lower the rear a bit more to make the fender to tire gap even front to back. These are Aodhan 19x11 et22 with 275/35s all around.

I could easily fit 305s in the rear of mine right now. the problem would be the fronts. 275/35s are already getting close, and I'm pretty sure i can't do 305s in the front at this height.
Alright, I'm closer to making up my mind. I'm going to go with a custom forged wheel so I want to make sure I nail my offsets.
Front -
I took my rear wheel, 285/30R20, 20 x 10 ET30 and it fit with a tiny poke.
I think 18" x 10" ET27 and running a 285/30R18 wheel would be perfect. Thank you @digital.aaron , I think you're spot on with the ET27 suggestion.
Rear-
As above, my current rear wheel is 285/30R20, 20 x 10 ET30 and it sits pretty close to flush.
This is where I'm less confident.
I'm thinking 19" x 11" wide ET 25.
The current rear wheel has about 2 inches of clearance from the shock. New setup would be .8" wider and .2" (5mm) further tucked in, so I *should* have the clearance needed.
Any more opinions would be greatly appreciated and thank you everyone for your input so far.
The offset on the 19x11 and 19x11.5 will be very crucial.
generally to fit wider tires, the wider the wheel, the higher the offset you need to go to compensate for the poke, to be able to use without negative camber
