I also need brakes, which are going to be crazy expensive too - like $900 or so total for front and rear (not including any possible calipers!). They said rotors nowadays can't be turned very much before they get too thin and can warp, so they just replace them. Seems a bit high? They are a good shop, but i always thought brakes should be fairly cheap.
My Stoptech Sport Pad + Centric Premium Rotors and pads can be obtained for ~$400 all around, but you can probably do cheaper for normal Centric Ceramic pads. Labor can cost anywhere between $200-600 depending if they are working hourly or by flat rate

A lot shops prefer to replace rotors as turning them is about the same amount of time (labor rate) and are less likely to result in people returning due to warp or vibration, especially if they ignore minimum thickness.

It's always a lot easier to save on parts vs save on labor.

You shouldn't need any calipers unless they are absolutely seized and cannot be serviced/lubricated. If you can DIY or get help from a friend, it'll save you more money. It was also mentioned above that the right rotors can last longer, though that highly depends on how well your new brake pads can bed into a used rotor.
