Good writeup. It shows how simple this procedure is.
The only thing I would add is it helps if you warm up the oil some, before pumping it in.
I let the oil sit outside in the Florida sun, in their containers, for a few hours. That lets it flow easier. It may not make much difference if you are using a good pump, but some of the cheaper pumps need as much help as possible to move the thicker oil used in the rear end.

Hey BB,
i see you have used the Amsoil products for your diff & gearbox. i have an '09 G37S sedan, 6MT with 27k miles. i recently bought the same Amsoil fluids and will be doing the change next week.
i just wanted your thoughts on the products - have you been impressed with performance? any improvement/worsening of shift quality or anything else like gear whine? i've heard good thing about Amsoil, but this is my first time using their stuff.
also, did you need to use the friction modifier in the diff?

BB, question about the oil level.
Am I correct in understanding that when you refilled the diff, the back end was raised and on jack stands, the front wheels were on the ground. In this state, the car is pointing down. You filled it til it started to overflow, then lowered it to get the level proper (basically filled to the lower level of the hole). Then raised again to secure the fill plug. So as you're raising, the level relative the fill plug is actually going down, so no additional fluid would come drain out.
Any particular reason you didn't place all 4 corners on jack stands? Same vehicle leveling concept applies to the trans (6mt) too, correct?

Quick question. I'm about to order some fluids but I see that in the FSM it states to use 80W-90 or API GL-5. Is there anything I should be worried about if I changed the oil to the Amsoil Severe Gear 75w-90?
