This also fall in to the 'it depends on your usage' but taking the undertray off will promote higher airflow UNDER the car, which will increase lift and reduce stability.
Hood venting works for sure, but then REDUCING air flow by using large blocking plates and proper radiator airflow ducting will work to get temps down too
Given my 0 engine mods, I'm going to go with oil cooler and brake cooling as priority #1. Cooling the brakes will also help with pad wear, and at the $$$ of the carbotech combo, I'm happy to save some money if I can.

^ True, but if you're on the stock radiator, a little less front downforce is more fun than limp mode on a track day. You could always wait until you go into limp mode and then take it off for the next session. I didn't have the limp mode problem (CSF Triple Pass radiator), but supposedly, these cars go into limp mode right away under track use.
You won't put anywhere near the same stress on a car on the street as you will on the track.

True dat. LeMons officials frown heavily on car-to-car contact and will pull you off the track for a time penalty if you do. We were hittee a couple of times and hitter a couple of times. My bump wasn't detected by the officials so my team got lucky. That said, the contact broke a couple of bumper bolts and I was black flagged for the bumper cover flapping in the breeze. Nothing a roll of duct tape couldn't fix.

Your alignment, sway bars, and tires will also really help with understeer. Mine is set up very neutrally now.

The only bad thing about this car on the track is the headroom with a helmet. I am about 6'1" and usually sit pretty upright. I had to lean the seat back quite a bit to get clearance for my helmet. I still rubbed, but oddly enough I did not notice it while on track.
I pumped up the side bolsters and the seats seemed to hold me in pretty well even though they are leather. It would have been even better if I had remembered to turn down the lumbar support so I sat further back in the seat. Whoops!

That's true, not much headroom at all! Strange actually that a sports coupe has seats that sit so high. The sunroof is thick, but the seats do not go low enough. I'm 6' on the dot and even without a helmet I would like more headroomfor piece of mind.
