I'm thinking you're going to be happy. You don't strike me as a "stanced" guy. I'm not either but I do envision a slight drop someday especially with the extra height from the X.

That's right. Stance is way low on my radar, if at all. But as you know, the wider the diameter the wheel gets, the lower the tire sidewall profile, and the more awkward it looks at OEM height. That was a motivating factor for me in choosing 19" wheels. That, and the weight compromise, 19's instead of 20's.
I'm not adamant about no drop, but never so much that the vertical gap is less than the horizontal, if you follow what I'm talking about. Regardless, any kind of lowering would be part of a suspension upgrade, as a side-consideration of the upgrade, not the purpose for it.
Newt gave me a heads up yesterday, with the idea of replacing OEM struts and springs with the OEM suspension from the NISMO 370Z. That's got me interested.
Makes perfect sense to me. Would be very interested to hear your thoughts were you to do the NISMO 370Z upgrade. I think the 19s will be perfect on your car, that's the direction I'm going as well. The last choice I need to make is whether to go with the set of fronts or rears, I think it's a difference of 3 or 4 lbs and a 1/2 inch.
I wanted to swap my OEM out for Konis and swift springs but the X won't allow for that. I'm still on the fence regarding coilovers especially given the limited choices for the X. If KW makes something I'll likely go that route.
Benefits of the Nismo 370 struts? I already have lowering springs on the OEM G35 struts. Wondering if making the swap would make sense.

Aside from improved handling, the obvious benefits of coil-overs is the ability to dial in exactly the amount of damping you want in your struts, as well as the ride height you want. The downside to coil-overs is the cost for quality, and the lesser ability to weather Northeast Winters.
The one thing I never understood (as expressed in my worst not-a-mechanic personae) is how coil-overs are a proper suspension for the rear end of our cars, considering that the struts don't go up the center of the springs in the rear.

Do you mean that the Shock and spring are separate in the rear? If thats the case not all coilovers follow that set up. One example are the D2 racing coilovers i have on my X which are shock and spring combo front and rear. I will admit it looks weird not having anything on that rear control arm where the stock coil spring is usually located. Also since you have the S rear wheel drive, you have a lot more coilover options to choose from.
Where can you buy the key lock delete / key hole cover?

I wouldn't bother calling Infiniti dealerships about that part. I'll look at the part # on the box when I get home tonight for ya. My dealerships parts dept. said, "We don't sell aftermarket parts". I contacted a company from the net and they ordered it from Nissan for me. I think the "delete" cost me about $20. You just need to supply them with the paint code. I'll see what I can find out for you, Rochester.
