Car won't pair with iPhone
I go to Bluetooth on the phone. The car is not listed until I go to Bluetooth on the car, and then it appears on my phone as "MY-CAR". When I then select MY-CAR on the phone, it immediately says "Pairing unsuccessful. Make sure "MY-CAR" turned on, in range, and is ready to pair." Of course it's within range, it just sent me the MY-CAR prompt! The Bluetooth on the phone works ok with every other Bluetooth device I have, so I'm ruling out the phone. Any other device, I'd unplug it, and then plug it back in, but it's the car stereo. Maybe I could pull the fuse...I don't know. I'm pretty sure I've tried everything- there really aren't that many things to try. I'm hoping this rambling makes sense.

Just out of curiosity what iPhone do you have and what version of iOS are you running? Also has it ever paired before? I namely ask because I have a similar problem, I have an old iPhone 6S (Yeah...pretty old, but I refuse to pay full price for a phone even if its in "installments" for 30 months), anyway I never had any issues pairing to my 13' G37 or my 14' Q50 but when I updated several months ago to iOS 14.4 I couldn't get it to connect anymore, sometimes it will randomly connect for a second and then immediately disconnect. I don't have issues with bluetooth with anything else. Perhaps check if your phone has an update and see if that fixes it (I should probably do the same...14.6 is available).
Also if you can borrow someone's phone to see if it'll pair then you can narrow down to see if it's a phone issue or a car issue.

As KidJai06 pointed out, did you recently update iOS (knowing Apple it was a forced update)? Every time Apple does a update something breaks. There have always been issues with Apple products and these cars.

It is likely not the car and there is no fuse to pull or reset to execute. Make sure you delete the phone from the car and try pairing again. Remember, you are driving a 6-7 year old car that had seriously outdated tech when it was brand new.

He said delete the phone from the car not the car from the phone. Go into your settings and delete the phone as if you are replacing it or selling the car. Once it's deleted you should be able to go back in and add it.

I have the same issue with my Q60. I have an iphone12, IOS 15.3.1 It worked fine on my car for 3 years. Then it stopped. I removed it from the car, I removed the car from the phone. I rebooted the phone, I turned Bluetooth off on the phone and tried to add the phone to the car again. Multiple times. No dice, MY CAR shows up on the Bluetooth list and the car shows a pairing message with a pairing code. When I touch MY CAR on the Bluetooth list I get the message "Pairing Unsuccessful Make sure "MY CAR" is turned on, in range, and is ready to pair. OK. I hit OK and the same message pops up. I get no where. Have tried this multiple times. Has anyone found a resolution? I am ready to get rid of this car--91 Octane gas requirement and now I can't use my phone.
