I spoke with Eric @ getyourwheels again and to be honest he really seems to know what he's talking about.
35 offset should sit exactly flush with the fender on stock height. It'll be about 29mm further out than where the stock wheels are now. Stock wheels are about a 6/8ths of an inch behind the fender atm so they'll be maybe 2/8's of an inch at most past fender after.
Front will be about 16mm so perfectly flush.
He claims to have done 10.5 35 offsets all day long on g37 coupes. He's sure there won't be any issues.
And shaving down the alloys is basically shaving down where the alloy meets the mount thing.
