only numbers i compared were from the same day on the same dyno run. i just put the graphs from monday up to show people just how different each dyno run can be

There will always be some variation between dyno runs, even on the same dyno. Not sure how it's done with cars, but with bikes, at least 3-4 runs are made, then averaged out. A 1-3 hp difference between runs is very typical. Factors like heat soak, ambient temp, barometric pressure, etc will all affect your results.
I'm surprised they didn't do the subsequent tuning and runs on the same dyno - would of made more sense to do so.
