Coupe or Vert?
Right... you're looking for a Coupe.
The Sedan's body style changed in 2007, but retained the G35 nameplate, until 2009 when the new engine was released. The Coup's body style didn't change until 2008, getting the new engine, but the 5AT. 7AT wasn't until 2009.
At least, that's how I remember it. Might be wrong. Go to wikipedia and figure it out.

As far as practicality, I personally don't see much of a difference. Both the coupe and convertible have a small trunk and a token backseat. The convertible has a bit more room in the cabin, but neither car can really be called practical. The sedan is about the closest you can get to real practicality in a G.
Personally, I would drive both and figure it out that way. It will really come down to how much you enjoy putting the top down vs. the better drive of the coupe. If you're buying used though, I would tend to avoid the convertible simply because of potential maintenance issues on the hard top. They're great cars for a lease though (and attractively priced right now).
Yes my only worry with a used Vert is the fact I am worried about the potential maintanance costs of the top mechanism versus that not existing for the coupe. Especially with the vert being a daily driver, it will rack up mileage that I think the coupe can handle much better.
Im not worried about practicality too much because if I need a backseat or trunk, I have a 2000 Q45 that though it will be VIP-esque, I will still have decent trunk space and a full backseat. I should be fine though because my daily routine is to go to work and go home plus I have no kids so its the best time for me to own a coupe
As far as performance, I know the g37 isnt going to be the fastest coupe out there, but its what I want as far as looks and style. The fact that it is pretty quick is a bonus. Besides, the only modding I see doing is LED/HID upgrades, exhaust, lowering springs (debating coils...)/shocks, wheels, intakes, cosmetic work. So yea, nothing too intense because I will be keeping it for a while so there is no need to shorten its life span.
So basically what Ive gathered is that I need a 2009+ G37S. I dont know if the NAV was part of a package (btw, do they all come with sunroofs?) but it is a feature I want because since we cant replace the headunits, I need to get everything I want up front.

"Prioritize performance" and "solely for the performance" are two different things.
