Your other senses don't become any more keen when you lose vision. You just rely on them more and therefore notice things out of necessity that you never would have before. I'm pretty sure your vision is good enough for drag racing if you can get a drivers license. As far as tach watching, when you get in tune with your car you can tell when to shift as much by the sound of the engine and feel of the car as much as seeing the exact RPM.

Kudos to you OP for not letting an impairment keep you from doing what you enjoy! Like the others have said, even with sight, I find that I just "know" where to shift without looking at the tach. I think in time, you'll get a good feel of the way your car behaves and will "know" when to shift also. A shift light would be a great investment. Good luck and let us know how you do!
