I did a couple searches, but I did not really come up with anything. What are you guys using to clean your dash. Right now I am just wiping with a microfiber towel, but I would like some product to help clean/protect without evaporating all over my windshield. Thoughts?

For the dash/vinyl, I use 303 Aerospace Protectant. I spray on a microfiber towel, wipe, and buff off with dry side. It leaves a nice matte finish that is not greasy and protects from UV!
I second DPNx714. I usually dampen the towel with water and spray 303 aerospace protectant onto the towel and wipe the dash down. You can also perform a maintenance clean of the leather with the same technique.
I tend to use Einszett Cockpit Premium. here is a good guide, I find it very very helpful.

I like the non-shiny appearance it gives, almost makes the car look brand new. See attached photo of a Lexus IS300 dash.
I'd recommend Wolfgang Cockpit Trim Sealant. Awesome product. Nice sheen, adds depth to the color of your trim and lasts a long time (60-90 days). Highly recommended. Use a foam pad and wipe it on.
To the original question, I use Mequiars all purpose cleaner(diluted 10:1) for dirtier jobs. Just gotta agitate with a soft bristled brush then wipe away with a clean microfiber towel. Then I hit it with the 303 Aerospace Protectant. Some say its overkill but I like using dedicated products instead of an all-in-one formula. Turns out with great results.
