you can get that drop with the coils. the swift springs give a very mild drop

Those rims look like 22" as well, so that could be giving the car a more "dropped" look. Coils will get you lower, while Swift and Eibach do give a more moderate drop.
Will this drop clear speed bumps and other road hazards pretty good?
Once you get used to how to navigate steep angled drives and don't mind annoying those behind you when you have to crawl over speed bumps it isn't too bad. One reason I got the coilovers is I was TOO low on my B&G springs, I was 25.75" at the front and that was too low for me, made drives more stressful than I wanted. The 1/2" higher that I'm set on my coils made a huge difference. If you're on a stock setup w/ suspension, wheels & tires be prepared for a dramatic difference in ride comfort if you go from 18" wheels to 20s and the narrower sidewall tires combined w/ firmer springs or coils. I like the firm ride and "connection" to the road, but it's something you need to be aware of.

I was thinking about Stance, what's the max height? I don't want to go too low. Probably just the height in this pic or a little higher.
Stance are a good choice, I'd contact Need4Speed and mention myg37.com here's their site, the owner has these coils on his G and should be able to give you specifics regarding height. They should adjust higher than that pic for sure. Welcome | Need 4 Speed Motorsports Inc.
So do the coilovers help with limiting the upward travel that's giving me the slight rub when I hit the large dips? I know they are stiff, just hoping the rigidity might be tighter or more adjustable than springs would offer.
