From the seats back the vert is a diff car. Sheet metal, frame, suspinsion, it's longer and wider. Other than that... Grab a sawzall and go to town, blades are cheap and you won't need more than a few. No reason you can't chop up a coupe.

The BRZ looked decent. Maybe the Testarossa too... but that's about it.
OP- I hope you would just buy an OEM vert instead of taking the ax to your own car.
This is something that would not be advisable. I would give you crap but I figure you are just learning. Please just trade your car in on a convertable if you really want one. The money you will save from not turning your car into a convertable can spent on keeping you from going upside down on your loan for a convertable.
