Hey pcasey, im sure 275/30 will work, just shave the bracket more or take it off completely.
It should work if you shave the majority of the bracket off. I put on spacers this weekend for my wheels and my back was at 10.5 +22 with 275/30. My rear's stance is just about tucking in without spacers but with spacers you could barely get a credit card in between tires and fender. I'm at about -2.6 camber and that wasn't enough and I still rubbed on the bracket. I rubbed on the tiniest bumps on the road and when I tried going up a driveway my tire actually bent the bracket a little and now the left side of my rear bumper is a little off. Had to take off my spacers, and will probably work on shaving off a little more of the bracket.
Anyway, my point is 275/30 should work but you'll be cutting it close if your bracket isn't mostly shaved off and you're running some camber.
