CAI loudness
I don't know exactly how big of a roll it plays, but it DEFINITELY plays a roll, considering the exhaust on the coupes is different than the exhaust on the sedans.
First gen sedans who were looking to get that coupe sound were lucky, as they were able to switch their midpipe for the coupe midpipe and voila, they had the coupe sound. Second gens is a different story, and if you wanted to get the coupe exhaust note, you'd have to switch to the coupe exhaust, which is a whole huge ordeal (I think).
In terms of sound it definitely makes a difference.

I don't think you need to change the manifolds or the cat pipe. They should be the same. The muffler placement and design is probably what makes the coupe sound different (better). Wish I knew for sure.
