new G37S: Front license plate or not?
You're probably answering your own question. If you don't want to risk being stopped then install the front license plate. Otherwise, take your chances that law enforcement will ignore your nice sports car.
A license plate on the dash or flip up (although it's cool) won't cut it. They'll just smile with amusement, write you up a ticket and then you'll either pay it or go to court and then try to explain that you weren't being sneaky. ;-)

I suggest telling your dealer NOT TO DRILL the holes. There are always other options out there. I sometimes just ziptie mine to the bottom grills (when I know there will be DUI checkpoints around).
No front license plate
Here's a data point for you:
Bought my G37S 1 year ago and never installed front plate (Washington State) and have never been stopped or cited for it.. The black one looks so nice without it.
