These cars are generally 'babied' or reside in a more southern state.
Theoretically, it should withstand any weather, you'll just need to be on top of the maintenance, more so than usual - cleaning / softening the seals, making sure that the hydraulic pump is in good condition, keeping an eye on torn cables and loose flaps.

Just before going into storage you will want to change the oil, wash (and wax) the car, lube up the rubber seals, and make sure the tires are properly inflated. I would suggest you invest in a good quality car cover and, if possible, get a battery tender/ maintainer especially if the car is not going to be used at all during the winter months.
Storage Unit
I ended up going with a clean 10x20' storage unit. I changed the oil, used Sta-Bil in the gas tank, had it washed and waxed before putting the car cover on.
I also placed packets of mouse deterrent in the trunk, engine bay, front and back seats, and in the corners and floor of the unit. 😊👍

I would still strongly suggest getting a battery maintainer if that is a option where you are. In addition to the cold weather taking a toll on battery health overall, these cars will drain a battery if not regularly used. Either way, sounds like you have a solid plan so good luck!

Why do people baby g verts? Because these are beautiful and relatively unique vehicles. A lot of people want to keep them for a long time, and, especially, away from the salt.
Can you drive this car in the winter - specifically, inclement weather? Absolutely. Just like any car, it'll do just fine in the snow, assuming you understand its pros and cons.
Would I or have I driven mine in the snow and salt - absolutely not. That's a choice.
