Should I replace valve covers on my 2011 G37?

I doubt the gasket maker will make much of a difference here. Just tell your shop to buy from Nissan if he's going with OEM since it'll be a bit less expensive.

if u had owned any car with a vq35de you for sure wouldve lol

Perhaps so. I don’t know the issues with those. But if I was told I needed to do it I would expect to be shown why and would probably not need to ask advice on a forum. It seems it should be pretty clear cut and obvious.

^i say that because the vq35de tube gasket seals werent replaceable during those models so owners had to replace the whole cover which was not cool/fun because the tube seals always leaked sooner than later lol
