Fixing Damaged Bumper Question

So some a$$hat hit my rear bumper while I was parked and didn't leave a note. I am looking for a shop to bring it into and was wondering about the painting process. Is there a big difference between "baking" the paint on and just spraying? I have noticed a few shops advertise that they bake and some don't.

Thanks!

I already have a new bumper, just need a good place to take it. New bumper by the way was around $370.
