One of my worries are buying something off the website and just seeing g37 and not the G37S. Will the Stillen sway bar set fit the S model as well?

Yup, you just won't feel as much of a difference because the sways on the S are better than non-S.

Is it necessary to buy stillen sway bars, or will I be ok with stock ones on the S? Will there be any difference in body movement?

They aren't necessary, but they will help reduce body roll and improve the handling some.
