So in the event that the list hits 15+, and everyone thinks they will be paying $550, BUT then deposit time comes, and only 3 lay down deposits and thats it......are the 3 that put down deposits stuck with the work at $750?

Yes thats how it works...people are always down to do it but when it comes to paying and sending in parts they back out. If i take in deposits and the final price is too high for anyone i will refund deposit no questions asked.
