Am I missing something? Why couldn't I use this filter: 09 2009 Infiniti G37 Cabin Air Filter NPN Infiniti Cabin Air Filter

It says it fits the G37, has activated charcoal, and is a HELL of a lot cheaper than the Nissan filter.

Thoughts?

Yes you can. I did and installed it today with no problems. The NPN charcoal activiated filter comes with two sponge spacers that stick on the two sides. After you remove the tape and stick the spacers on the sides of the filter it matches the OEM filter width and installs with no fit issues. When you compare the stock filter to the NPN charcoal filter you will see that there is no comparison between the quality of the two. The stock filter is a flimsy POS in comparison. I got mine for under $30, including shipping. It took about 15 minutes to install.

When my car was at 500 miles, I already had a stink from the vents when I use the A/C... It is now at 4300 miles... would warranty cover this?

^^^ FYI: the stink from the A/C has nothing to do with the in-cabin filter in that the stink is from the mildew, not because the filter needs replacing. So no, the warranty wouldn't cover this.
