Has anyone converted a non-navigation G37 to one with that option? Would it simply be replacing the control module and adding the GPS receiver and reusing the existing LCD display?

Yes, it has been done.
No, the parts are not plug-and-play, rewiring of harnesses is needed. There are quite a few threads about this topic. Just do a quick search and you will find all of the info involved.

So I have seen a few you tube videos of aftermarket mods where you can display a Garmin navigation system on an non-navigation G. The videos are pretty old, upwards of 5 years, but has anyone done this sort of mod and how did it work out?

Well after getting a $4 phone mount for one of my vents and using WAZE on my iPhone X, I think the idea of getting some Nav program to work on my non-Nav screen is moot. The WAZE app works great (way better than a factory Nav system) and the screen is big enough for me to see various street names so I am good to go.

Very smart move. Integrated nav is pretty much obsolete IMO.

One should always pay attention to the visual route, not just listen to the audio.

Ran into this issue with my garmin. Approaching this roundabout from the east, the intention was to continue west. Instead the verbal announcement said something to the effect of turn right at the third exit.

Turning right at the third exit would of resulted in going south, not west.
