Does anyone know if there is a way to change the colors on the information screen to something other than default gray/orange background color?
Only by taking the cluster apart and changing the LEDs to a color you prefer. There's an eBay seller who sells them but it's only some overpriced LEDs you can get cheaply at Radio Shak.
