Cooling fan starting too late

Hi,

I have an issue with my cooling system which led to my head gasket failure.
my engine is overheating, because my cooling fan turns on too late. Ive changed the thermostat, cooling tempt. sensor, radiator cup and the water pump.

Car is working and the cooling fan doesnt turn on for a while, only turns on when even is very very hot (105 degrees C on OBD2 scanner). My mechanic is telling me its normal, but I am sure that it isn't since the tmp gauge is well above the normal level.

When i turn on A/C , the cooling fan works without any problems
What could possibly be the problem?

The care is a 2008 G37s.

Your so called mechanic is incompetent.
